Case Study: Historic Solution
The Challenge
Maintaining the design integrity of an old building when installing a Duke serving system is a test the Duke team faces often. However, preserving the historical integrity of an edifice located on the campus of one of America’s oldest and most prestigious universities is a challenge of a different proportion. This was the case where the college’s foodservice officers were hoping to improve serving capabilities in a space in which new walls and/or building penetrations were simply not going to be permitted. The ultimate goal: To increase participation in meal services among students.
The Solution
The Duke team was able to design a modular solution that didn’t infringe on the space, complimented the historic granite décor and standing imagery that included a set of historical flags, and could easily be moved out of room to allow for multiple uses of the area. The near-200-foot system included a salad bar, plate shelves, silverware stands, pizza stands, and hot and cold service. With an increase in food variety and improved speed, this new Duke station is able to feed more than 3,000 students per food period.
